There is nothing better than homemade macaroni ‘n cheese; it’s definately one of my favorite comfort foods. This recipe makes a large amount; you can cut the recipe portions to prepare a lesser amount or divide into two casserole dishes, bake and freeze one for another time.
Ingredients:
5 cups cooked macaroni (approx 4 cups uncooked)
5 tbsp butter (I use *real*, salted butter)
2 eggs
1/2 tsp salt
1/2 tsp pepper
3 cups milk (I use whole milk)
2 cups shredded mozarella cheese (you can also use Monteray Jack)
4 cups shredded cheddar cheese (*Sharp* is the best!)
Cook the macaroni until done as usual. Do not overcook it. Drain macaroni in a collander. Place macaroni, butter, salt,pepper, milk, mozarella cheese, and 3 cups of cheddar cheese in large mixing bowl. Mix eggs in a bowl first and then stir into mixture. Now transfer to a large casserole dish. Cover everything with aluminum foil and cook for 45 minutes at 350 degrees. After you 45 minutes, remove the foil and add the extra cup of cheddar cheese across the top. Bake uncovered for another 15 minutes.
